Strawberry Butter

This delightful spread is most worthy to pass on. Kelsie made it this weekend to go on top of biscuits. I believe it would be most yummy on anything and could easily be made with any fruit of the season!

Strawberry Butter
1 cup unsalted butter, room temperature
1/4 cup powdered sugar
1/4 tsp salt
1/2 cup coarsely chopped fresh strawberries

Using an electric mixer, beat butter, sugar and salt for about one minute, until light. Add strawberries and beat until combined, but not totally uniform. Chill. When ready to serve, do so at room temperature. Can be rolled into log and frozen up to 2 months. Thaw before using and serve at room temperature.
