8 Day Casserole

Last night I made a Chicken Broccoli Casserole and before I knew it, it somehow grew into 2 huge casseroles... sometimes I do get carried away with quantities. But the word LEFTOVERS pops in my head and I can't help myself. I lOVE LEFTOVERS! To me it's a free meal... no energy, no time, not too much extra cost... everything is done and it only needs to be reheated. It's a win win. Food somehow tastes better when it sits together for a while... magic happens. Kelsie came upstairs and looked at the huge bowl and I realized then that Kelsie doesn't like this casserole... in her 17 years how could I not remember this? But the look she gave me told me so. It really is a yummy casserole with breadcrumbs on top. It just looks way bad in this picture. I swear I have made enough to last 8 days, but by then it would have gone way bad... so I called in reinforcements and the kids will be by to help eat it.

i am the same way! i don't know how to make a small dish of something, i make enough for a week...but, what you made is one of my favorites...kels will grow to love it, maybe?

WOW!!! Send that to the Army . . . that's the only way you're going to get rid of that much.
